Watermelon, Pineapple and Peach Smoothies Recipe


Ingredients:
2 cups chopped seedless watermelon
1 cup crushed pineapple, drained well
2 cups peach yogurt
Dash of ground cinnamon
1/2 teaspoon vanilla extract

Instructions:
Blend ingredients together in a blender until smooth and serve immediately.

Servings:
Serves 2.

Delicious, healthy and low cal. Spoil your family
with a smoothie party!

Skinny Ideas - Cucumber Chips and Garden Salsa Recipe

This is a great year to grow your own kitchen garden

be out of your price range.
Grow a few on your fence
this spring to liven up your diet.
My Hubby loves big bags of potato chips. ($4. each)
I substitute a platter of cucumber chips with low cal garden salsa dip
and he doesn't miss a thing! Except the 64 lbs he has lost.

You can use any low cal dip recipe but I chose to share this one because
it can all be made FREE from the garden all spring and summer.

Easy Garden Salsa Dip
28 servings
prep time: 30 minutes

Ingredients
* 4 to 5 medium tomatoes, chopped
* 1 medium onion, chopped
* 1 medium green pepper, chopped
* 2 sweet peppers, seeded and chopped
* 2 tablespoons minced fresh basil
* 2 tablespoons minced fresh parsley
* 1 can (8 ounces) Hunt’s® Tomato Sauce
* 2 tablespoons olive oil
* 4 teaspoons lime juice
* 1-1/2 teaspoons garlic salt
* 1/2 teaspoon pepper
* cucumber chips

Directions
* In a large bowl, combine the first seven ingredients. In another bowl, combine the tomato sauce, oil, lime juice, garlic salt and pepper. Pour over vegetable mixture; toss to coat. Cover and refrigerate until serving. Serve with cucumber chips. Yield: 7 cups.

Nutrition Facts: 1 serving (1/4 cup) equals 20 calories, 1 g fat (trace saturated fat), 0 cholesterol, 149 mg sodium, 2 g carbohydrate, 1 g fiber, trace protein.

Broccoli Salad with Olives

Broccoli Salad with Olives



Ingredients:

3 cups broccoli florets (1 small head broccoli)
1 large clove garlic
2 tablespoons white wine vinegar
1 tablespoon capers, drained
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1/3 cup extra-virgin olive oil
3 celery stalks, trimmed and thinly sliced
2 scallions, thinly sliced
6 jumbo black olives, pitted and quartered

Directions:

1. Steam broccoli florets in a steamer basket set in a medium pot over lightly salted boiling water for 5 minutes until crisp-tender. Drain and rinse under cold water.
2. In a blender or food processor, purée garlic, vinegar, capers, salt, and pepper. With motor running, add oil in a thin, steady stream; blend until smooth.
3. Pour dressing into a large salad bowl. Thinly slice broccoli florets and add to dressing. Mix in celery, scallions and olives.
4. Toss gently to coat evenly with dressing and serve.

Add cooked noodles, rice or tortelini for a tasty low cal meal
thats good for your skin.

Ingredients

1½ cup strawberries, fresh, quartered
5 cups rhubarb, cut into 1/2” pieces
½ tsp salt

1/8 tsp nutmeg, ground
½ tsp cinnamon, ground
3 Tbsp cornstarch
1 pie crust
2 Tbsp butter

Procedure

1. Assemble all ingredients; preheat oven to 425° F.
2. In large mixing bowl, place strawberries, rhubarb, salt, nutmeg, cinnamon, cornstarch and Truvia™ natural sweetener; toss together until mixed well; set aside.
3. Place pie crust dough on lightly floured surface; roll out; transfer to parchment-lined sheet pan.
4. Place fruit mixture into center of pie crust; leaving 1 ½” border around edge of crust; place butter pats on fruit filling.
5. Flip up crust edge towards middle, pleating as you fold up.
6. Bake in 425° F oven for 25-30 minutes; rotate 180° half way through baking.
7. Cool on wire rack; serve warm or at room temperature

Philly Cheese Comfort Casserole Recipe


Bring the fabulous flavor of Philly cheese steak sandwiches to a comforting casserole!

INGREDIENTS
1 1/2lb lean (at least 80%) ground beef
1 package (8 oz) sliced mushrooms
1 teaspoon salt
1/2 teaspoon pepper
8 slices (1 oz each) provolone cheese
2 tablespoons butter or margarine
2 large onions, halved and thinly sliced into wedges
2 medium red bell peppers, cut into strips
2 cloves garlic, finely chopped
1 can (16.3 oz) Pillsbury® Grands!® Homestyle original biscuits

DIRECTIONS

* 1 Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
* 2 In 12-inch skillet, cook beef, mushrooms, salt and pepper over medium-high heat 7 to 9 minutes, stirring frequently, until beef is thoroughly cooked; drain. Place in baking dish. Arrange cheese over beef mixture, overlapping slices if needed.
* 3 In same skillet, melt butter over medium-high heat. Add onions and bell peppers. Cook over medium-high heat 3 to 5 minutes, stirring frequently, until peppers are crisp-tender. Stir in garlic; cook 1 to 2 minutes longer. Spoon over cheese in baking dish.
* 4 Separate dough into 8 biscuits. On lightly floured surface, pat biscuits into 5-inch circles. Arrange biscuits over vegetable mixture.
* 5 Bake 35 to 40 minutes or until biscuits are golden brown on top.

To easily cut peppers, cut a thin slice off bottom of pepper. Set pepper on cutting board, cut side down. Cut strips of pepper from stem down to board, cutting just the flesh and leaving seeds and core attached to stem.

Here are 5 of my favourite juices. To make them you’ll need a citrus juicer and a regular juicer. The Melon Ball juice requires only a blender. Enjoy!



Citrus Party
Fruit Juice
1 orange
1 tangerine
1 pink grapefruit

1. Juice the fruit in a citrus juicer and combine.

Morning Pick Me Up

1 apple
1 tomato
2 carrots
1 orange, juiced in a citrus juicer
Juice of 1/2 lemon

1. Juice the apple, tomato, and carrots.
2. Add the orange juice and mix well.

Bugs Bunny

8 carrots
1 orange, juiced in a citrus juicer
Juice of 1/2 lemon

1. Juice the carrots
2. Add the orange juice and mix well.

Melon Ball

1/4 watermelon
1/4 cantaloupe melon
1/4 honeydew melon
pinch of cinnamon

1. Peel and seed the melons.
2. In a blender, blend to together and then serve over ice.
3. Sprinkle some cinnamon to garnish.

Vegetable JuiceThe Immunizer

1 beet
4 carrots
1/2 grapefruit, juiced in a citrus juicer
1-inch piece of ginger

1. Juice all ingredients and mix well.

Sugar Free Sweetheart Parfaits for Two - Recipe and Coupon from Kraft

What You Need
2 JELL-O Chocolate Sugar Free Pudding Snacks
1/4 tsp. ground cinnamon
1/2 cup thinly sliced fresh strawberries
1/4 cup PLANTERS Slivered Almonds, toasted
2 Tbsp. thawed COOL WHIP Sugar Free Whipped Topping

Make It
EMPTY pudding snacks into small bowl; stir in cinnamon.

SPOON half the pudding evenly into 2 parfait glasses; top with layers of half each of the berries and nuts. Repeat layers.
TOP with COOL WHIP.

Kraft Kitchens Tips

Make Ahead
Prepare parfaits as directed, except do not top with COOL WHIP.
Refrigerate up to 2 hours. Top with COOL WHIP just before serving.

Substitute
Substitute wine glasses for the parfait glasses.

Special Extra
Garnish each dessert with a light sprinkling of additional cinnamon before serving.

Pork Chops and Sweet Potatoes - Diabetes Friendly Recipe



Ingredients
4 loin chops, cut 3/4- to 1-inch thick
Salt and pepper, to taste
3/4 cup all-purpose flour
2 tsp vegetable oil
3-4 cooked sweet potatoes, cut into pieces
1 Tbs butter or margarine
1/2 cup currant jelly
1/2 cup orange juice
1 Tbs lemon juice
Rind of one lemon, grated
1 tsp dry mustard
1 tsp paprika
1/2 tsp ground ginger

Directions
Combine salt, pepper and flour in a shallow pie pan. Dredge the chops in flour mixture and brown in hot oil in frying pan. Remove chops to shallow baking dish, add sweet potatoes. In a saucepan, stir together remaining ingredients and simmer 3 minutes. Pour 3/4 cup sauce over chops and potatoes and bake, uncovered, at 350 degrees F., for 40 to 45 minutes. Baste during cooking time with remaining sauce.
